There’s a Gastro Revolution coming and not even the most notoriously fatty of American staples is safe. That’s right. I’m talking about… the BURGER. “Sacrilege!” you say. “How dare they defy the sacred conventions of burgerdom?!” Don’t get your pointy hat all blunted, Pope Benedict; the so-called “Better Burger” is here to stay — and for meat eaters, that’s definitely a good thing.
But what exactly do people mean when they talk about a “Better Burger”? In terms of great flavor, one’s personal favorite burger probably isn’t gonna’ get bested. And when it comes to healthy burgers — don’t they start and stop with veggie versions?

So what is this better burger I speak of? Well, a bunch of savvy gourmands around the country have gotten the silly idea that locally sourced, humanely raised, grass fed beef is not only healthier and more ecologically friendly than mass-produced beef, it actually tastes better.
And this idea extends beyond the just the patty; most of the restaurateurs who have adopted this concept also believe that everything else on the burger — from the bun to the produce to the condiments — should likewise be local, organic and fresh.

Of course, while taste is certainly one of the primary motivators behind the better burger movement, it’s not the only one. There are health benefits that stem from the naturally leaner grass-fed beef and overall better nutritional content of organic foods than what industrially processed foods typically contain. Specialized dietary needs are also better attended to by purveyors of the better burger, whether you’re on an anti-inflammatory diet or the Paleo diet. At the same time, you can ease your climatic conscience knowing that the food you’re eating was produced locally and not shipped across the country.

Some of the more renowned better burger vendors are the rapidly expanding Smashburger and Elevation Burger chains, DMK Burger in Chicago, Dick’s Kitchen in Portland, and The Counter in Los Angeles. There are a slew of like-minded burger joints popping up all over the country. People everywhere are embracing the idea that this guilty pleasure no longer has to be guilty. The better burger concept has clearly caught on — and it’s here to stay.
